My favourite holiday cookie is Refrigerator Shortbread.
I like this recipe because not only are they delicious with a cup of tea or coffee they are also super easy and very festive looking.

Refrigerator Shortbread
Combine: 1 cup flour
1/2 cup corn starch
1/2 cup icing sugar
Crumble in with hands 3/4 cup soft butter until dough comes together.
Mix in 3/4 cup chopped glace cherries.
Shape dough into two logs (I like small cookies, so I make skinny logs), wrap in plastic wrap and refrigerate 4 hours or over night. Dough will last in fridge up to one month.
Cut into slices and bake on an ungreased cookie sheet for 7 or 8 minutes or until edges are lightly browned.

I love baking all sorts of cookies but to me the epitome of Christmas cookies is shortbread from my Nana's recipe! Made them on Friday and I think another batch will be in order soon!
